Ingredients:
- 1 teaspoon matcha powder
- 2 1/4 cups shredded coconut
- 6 large egg whites
- 3/4 cup sugar
Instructions:

Prepare Your Ingredients:
Preheat your oven to 302°F (150°C) and line a baking tray with parchment paper or a reusable silicone baking mat. -
Mix the dry Ingredients:
In a large mixing bowl, combine 1 tablespoon of a high quality matcha powder, 1 1/4 cups of organic shredded coconut, and 3/4 cup of organic cane sugar. Stir until well mixed. -
Add Egg Whites:
In a separate bowl, lightly beat 180 grams of egg whites until frothy. Gradually fold the egg whites into the coconut mixture until fully incorporated. -
Form the Macaroons:
Using a small ice cream scoop or a spoon, scoop the mixture onto the prepared baking sheet, forming small mounds. Leave some space between each macaroon. -
Bake:
Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown. Remove from the oven and let the macaroons cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. -
Serve:
Once cooled, enjoy your coconut matcha macaroons with a cup of tea or coffee. Store any leftovers in an airtight container.
Tip:
If you prefer a sweeter taste, drizzle the cooled macaroons with some melted white chocolate.
